For more than two decades, Philip Moore has been one of Australia's premier herb growers. A published author on the art of cultivating herbs for fragrant and culinary use, in 2006 Philip decided on a change of containers... from pots to bottles!

Drawing on the traditions of the ancients, alchemists and monks of past centuries, Philip set out to create a range of spirits inspired by Europe but made from Australian native botanicals. From his micro-distillery in Erina (NSW), Philip crafted the first batches of Australian native liqueurs and dry gin in a traditional copper pot still. His aim was to meet or exceed the quality of the great European spirits whilst imbuing a distinctly Australian flavor, using ingredients such as cinnamon myrtle, wild lime, macadamia and Illawarra plum.

In 2008 Distiller Philip Moore was recognized on the world stage, scooping four major awards in the prestigious International Wine and Spirit Competitions in Germany and London.

He continues to strive meticulously towards perfection, distilling, bottling and labeling each and every batch by hand and sharing his artisanship with growing numbers of visitors to St Fiacre Distillery.
