St Fiacre Distillery: home of the native Australian spirit
Abracadabra … you have entered a timeless world of alchemy.
The ancients noticed that when a liquid boiled – as it does in distillation – that vapours are liberated and vanish into thin air.
They supposed that these vapours had ascended to the spirit world – hence the name 'spirits' for distilled drinks.
When the spirits condensed – as in distillation – and returned as an earthly liquid they brought back with them a little magic from the world of spirits.
Distillers are essentially setting free the spirits of herbs and fruit from their earthly bodies – which would only perish – to bestow on them a long and fragrant life in their new medium, alcohol.
At St Fiacre Distillery, it is the spirit of Australia that inspires our award-winning drinks, hand-crafted from 100% native Australian botanicals.

Location and Opening Hours
At St Fiacre Distillery, visitors can enjoy herbs in their natural earthly environment by meandering among the 2.5 acres of picturesque gardens. When you enter the distillery itself you meet them in their immortal state – the spirit world. Visitors are welcome to:
- Tour the Distillery, meet Distiller Philip Moore and taste the Spirits
- Enjoy heavenly coffee and scones in the café on weekends, or curry on Sundays
- Wander the earthly gardens and enjoy the ambiance and fragrance
Distillery opening hours are 10am – 5pm Wednesday to Sunday.
Café opening hours are 10am – 5pm Saturday and Sunday.
