In the Kitchen
• Crepe Suzette sauce – use instead of Cointreau
• Yin and Yang – icecream and Mandarin Liqueur
• Add a slurp to fruit salads.
Botanics
Known botanically as Citrus reticulata, mandarin belongs to the very fragrant Rutaceae plant family.
Family members include Rue – the herb, Murraya – curry leaf plant, Boronia – the intensely perfumed Australian native as well as the rest of the citrus family.
The essential oil is wonderfully volatile. As soon as the skin is broken the delightful characteristic aroma saturates the surrounding air.
The Source
Our fruit is grown on a high plateau in the hinterland west of our distillery at Erina. The elevation and mild winters combine to deliver intensely flavoured fruit.
Two varieties with complementary flavours are distilled to add complexity to the liqueur.
