Our Spirit Range

St Fiacre Spirits
 

In keeping with the time-honoured practices of our medieval namesake, St Fiacre spirits are distilled in a traditional copper pot still, with each batch meticulously hand-crafted by Distiller Philip Moore.

A unique aspect of the St Fiacre distillation process is the use of specific Australian native plants, selected for their distinct and enjoyable flavour and fragrance. Australian botanicals such as lemon myrtle have long been used in the kitchens of the country's best culinary establishments; but their foray into world-class spirits is a new occurrence. House specialties at St Fiacre include the use of such evocative plants as mountain pepperberries, aniseed myrtle, wild lime and Illawarra plum, among others.

Moore's Vintage Dry Gin
This premium dry gin uses 100% Australian grains and botanicals and is distilled seven separate times in copper stills to create an unprecedented level of flavour and enjoyment.

Australian Native Liqueurs
This hand-crafted range of liqueurs highlights the sublime flavours of some of Australia's lesser-known native fruits and herbs. St Fiacre liqueurs have won major international awards for quality, and include:
